This monocultivar produced with “Nocellara” green olives variety, farmed in Trapani area, gives life to an oil with an intense green colour, scent of the olives just harvested, herbaceous tone, fragrances of tomato and artichoke, an almond aftertaste with feelings of bitter and spicy. The Mediterranean sea breeze promotes the growth of a vigorous plant, which yields an extra virgin olive oil particularly suitable raw on vegetables, fish cooking and all Mediterranean courses.

Harvested by hand.

Continuous cold extraction, within 12 hours from harvesting, separation by centrifuge; natural settling and pourings.

Fruity, barely bitter and spicy with an aftertaste of almond, artichoke and green tomato.

Appearance

Green colour with golden yellow reflections, gently spicy and floral.
