Features

Dedicated to Carlo Barbera, fifth generation of the family and future olive oil master. Pressed in our experimental mill, this extra virgin olive oil is appreciated by top-class international Chefs. Cerasuola olives varieties coming from organic farming are also “Valli Trapanesi” P.D.O. certified. Olives are carefully pitted without spoiling the pulp. Definitely an excellent oil with delicate aroma and delicious taste.

Medium Hillside.

Method of Harvest

Harvested by hand.

Extractions System

Initial stone removal process, within 12 hours from harvesting, followed by continuous extraction of the olive pulp at controlled atmosphere, the oil is allowed to settle and then decant naturally.

Filtering Method

Natural fiber filters.

Aroma

Spicy and grassy strong and persistent.

Taste

Fruity and creamy. Balanced, with almond and green tomato aftertaste.

Appearance

Creamy oil, green colour with golden yellow hints.

Use

Perfect on great dishes. Use it as a cream, like a vegetable "fumet" to enhance the flavour of strong taste courses, typical of "haute cuisine".
