Produced from olives grown in the Val di Mazara region using organic farming methods, at over 700 meters in high hill areas. At this altitude, the olives reach their maximum content of aromatic compounds and polyphenols. The result is an extra virgin olive oil with a balanced almond-like fruitiness; its herbal aroma combined with an unexpected sweetness makes it perfect for all seafood dishes, as well as vegetables and fresh cheeses.
